Lamb Heart Ideas

Does anyone have any good recipes for lamb hearts. My brother has got about half a dozen and has given me a few, and i would like to try a few different recipes. I'll eat anything.

It's a long time since I had them, but I stuffed them with a mix of breadcrumbs and dried mint, wrapped them in foil, and slow roasted them.

The last time I cooked the I braised them in red wine & beef stock, a couple of bay leaves & some thyme.

I also fried scallions & tomatoes, then added some of the braising liquor to make a rich gravy.

I sliced the hearts & served them with mashed spuds & the gravy.
