In Tenerife, Ryanair have seperate bag drop desks for UK/IRL and whole different desks for rest of destinations. The desks are opposite ends of departures. I don't see any reason for it to be honest, can anyone shed some light? It's a new thing, used always be one simple row of desks.

Is it something to do with us not being Shengen?

It's only a thing now, never there before 2019 so don't think it's a shengen thing. Plus only bags so plenty of plane won't go to these desks.

If the non Schengen gates are at the opp end of terminal from the Schengen ones, then Ryanair are probably just putting the checkin near the gates?
