Christmas Mince Meat

    .....for mince pies obviously.

    The Delia Recipe I've used for about 20 years or so, makes 6lbs. (amount can be altered)

    It calls for 6tbsp of Brandy.
    I hate brandy. Won't drink brandy.

    So, this year, this month actually, I'm going to substitute it with whiskey, prob a Jameson Caskmate.

    This should be OK I reckon?
    Always buy a bottle of brandy and it sits there.....well, for a while . :pac::pac:
    The Whiskey will be availed of. :P

    Should be plain sailing I reckon.

    It won't make any difference, should have changed it to whiskey years ago if you prefer it :)

    Will be fine. Whiskey is nice in those pies.

    Can I ask why you need 6lbs of mince for the pies, honestly my eyes are watering here at that volume!.

    It's just the recipe in the book. I've done six pounds before, keeps indefinitely if stored correctly.

    But this time I'll do half.

    I prefer versions that use mince in its original sense of minced meat...

    Think OBriens have caskmates for 25 at the moment but I would be surprised if you taste difference v basic Jameson.

    Ah, do you mean from a glass or in the pie?
    Like can defo taste the caskmates stout as smoother than basic jemmy when drunk.

    Try replacing some of the brandy or whiskey with some Cointreau it really adds a lovely depth of flavor to the mincemeat

    That sounds really nice.
    I'd echo everyone else in saying that whiskey/brandy would make no noticeable difference.

    Discovered two jars of home made mincemeat at the back of the freezer from last year. My years of market trading preserves has me always making too much. Never use suet etc.

    .......got there eventually, half recipe amount, 3 lbs.
    Still a load for a few trays of pies.
