Buying open dates tickets?

    I am toying with the idea of buying open tickets for a couple of friends of mine that recently got married.

    Is it possible?
    Could I buy return tickets to Iceland for example and let them choose their own dates, without them having to pay any additional fees for peak times or any other reasons?

    Too many variables - I'd just give them a voucher to be honest

    Another option would be to sound them out about a trip, make a payment in a bricks and mortar travel agent ( not an OTA) and let them choose dates and destination. Booking flights for a 3rd party is always tricky...passport numbers, exact names dob's etc.
