    IMO you need to look at
    1 his diet
    2 his exercise - obviously he is being walked a minimum of twice a day - so on those walks he is probably going outside of your garden
    3 training to a particular spot - as advised above

    That should minimise the amount of unexpected poops on the grass.

    You need to train him to sh1t on command, this is possible. You do it by associating the action with a word. Dogs are quite predictable in terms of bowel movements, most will need to poo roughly 20 mins or so after eating, assuming you feed him 2 x a day. To train the word, say it as a command every time you are present when he's doing a poo. BE VERY VERY CAREFUL ABOUT THE WORD YOU TRAIN!!!!!!!!!!! ie, dont make it a word you would use in common usage or you could end up with a messy situation. We've done this with our dog for both wee's and poo's, we use it way more to get him to wee before going on a long journey or when we know we're going to be in town and don't want him to wee on a building or a shop....we trained this as a puppy, but it should be possible to do a behaviour modification on an adult dog as well.

    I’m with you; have a Golden Retriever 3.5 years and, apart from maybe 5 times, all defecation is in our own garden which is how it should be. I’m fed up clearing dog poo from the front garden of dogs walked off leash where the owner is a selfish idiot (not implying OP is).
