Butter chicken

    I'm a big fan of the butter chicken in Madina Desi in Dublin. It's different from most butter chicken recipes in that it's spicy almond rather than a mild tomato sauce.

    I'm just wondering if there's a recipe anyone could recommend to try and recreate it?

    Seems strange it call it butter chicken when there's no butter in it it does look tasty though I will give it try.

    I started out making this recipe but have adapted it and method a bit. It's a become firm favourite with the family. It doesn't have a load of ingredients so is quick and handy make. No almond though.

    500g Chicken pieces.
    3 tbsp of Yougurt
    Table spoon of lemon juice
    Pinch of salt
    2 tbsp of Tandoori spice
    Mix all together and marinade for a few hours preferably overnight.

    1 Onion ,2 cloves of garlic finally chopped
    100g butter
    Saute on low. I don't let them brown like the recipe above just long and slow till the onion is golden and nearly melting. Takes at least half an hour the longer and slower the better.

    Add
    500g passata
    100g butter
    1 tsp cayane
    1 tsp garam masala
    Salt to taste
    Bring to a simmer and cook for 15 minutes
    I add 250 ml double cream then bring back to the simmer for a few minutes.

    Best way to cook the chicken is skewer it and do it on the bbq but I mostly do it in the air fryer and it's damn good. Can never get it properly charred in the oven or under the grill. You can add it to the sauce when cooked but I like to serve it separately.
