Haven't been onto them yet but the Cork santander ferry (in addition to the weekend Pont aven) also served Roscoff midweek as we used it coming back last year to extend our holiday.

I presume that option has gone with the new route

If the Port of Cork have their way, they are still pursuing a link from Cork to Northern Spain with other potential operators according to their press release reaction to today's announcement by Brittany Ferries.

Here is their press release direct from the Port of Cork website:

Port of Cork’s Response to Brittany Ferries Decision To Finish the Cork to Santander Ferry Route

    Wednesday 29 January 2020

"Port of Cork’s Response to Brittany Ferries Decision To Finish the Cork to Santander Ferry Route

The Port of Cork have been informed by Brittany Ferries that the weekly Ro-Pax ferry service from Cork to Santander which includes a midweek Roscoff sailing is to cease operating. This surprising decision by Brittany Ferries is very disappointing, however we will continue to pursue other options for linking Cork and Northern Spain.

We remain supportive of Brittany Ferries who have operated out of Cork for over 40 years and we will continue to facilitate Brittany Ferries on their weekly service from Cork to Roscoff re-commencing in March 2020.

It is my understanding that the mid-week Roscoff sailings will use Rosslare following the switch of Cork Santander to Rosslare Bilbao on 28th February. The only Cork to Roscoff sailings will be on the Pont Aven on Saturdays when it resumes from March to October this year.

Really hope it stays, used it last year, it's a basic service so never expected frills but it's a great direct route to the less touristy areas of Spain. We need a tunnel to Europe.

BF have already confirmed that the economy "no frills" mid week service to Roscoff will be departing to/from Rosslare following the cancellation of it's Cork to Santander service. The vessel "MV Kerry" used on it's new Rosslare Bilbao route from 28th February will be the same ship used to operate on the Rosslare to Roscoff.

The only Cork Roscoff service operated by Brittany Ferries will arrive and depart on Saturdays from Ringaskiddy Ferryport on it's cruise ferry "Pont Aven" from March to October and this is not regarded as basic.
