Log in via web browser. Change details. Change your password.
You don't need your switch to access your account.

    accounts.nintendo.com

    or just google nintendo eshop

I never save my credit card details
    (a) so they are harder to steal
    (b) to make it more awkward for me to buy more stuff :)

Ok changed password. Then I enabled the two step verification option, after which I was given a bunch of back up codes. I’m wondering if these were for my recent purchases on the eshop?
If I buy a replacement switch, is this how I can retrieve all my previous purchases?

The backup codes are if you lose access to your second factor. Eg it's your phone and that's robbed.

Is there anything else I can do? I don’t suppose I can brick it remotely??

No, no way to do that! That'd be dangerous should anyone get their hands on your login details!
