Myself, the missus and the kid where looking to go away in October.
Somewhere cheap and not long travel on a plane.

Is salou a good choice. I know weather wise it's not guarrenteed but a quick Google search says it averages 23degrees which would be fine for us.
We did have a holiday booked for Italy in May but we cancelled for obvious reasons.

Or does anyone else have any other places in mind? We would do the canaries but last year the flight was too long for our little lad he went mad so I don't fancy a repeat of that haha

Edit: were looking at going on the 24th Oct for 1week to tie in with school holidays

i was in Salou in October one of the times i visited. we got the train down from Barcelona and the weather in Salou was about 5 degrees hotter and sunnier than it was 1.5 hours up the road.

the climate is nice, and we got around 26C and sun on all of the days we were there (4 days in total out of a week in Salou).

the place itself is big enough. loads in it, but wouldnt have the aesthetic charms of say the seafront in Lanzarote - it isnt exactly a "pretty" place - quite high rise, 1960s built apartment blocks etc.

in October you are lucky though, because the high season is well over and you still get nice weather, but can book a nicer hotel as they are scrambling for guests then.

it is also right beside Portaventura theme park, and it's sister water park "Costa Caribe" - both of which i believe were open (well the theme park was anyway - not 100% about water park) and they have added in the new Ferrari land with some impressive rides etc.

it's a decent spot to visit - with a kid, and as a couple.
plenty of nightlife options too - although, that's the one area that there doesnt seem to be any middle ground in - it's either loud "young people" raucous nightclub type spots, or OAP quiet watering holes. neither of which are "family" type places you would see kids in, in other parts of spain.

all in, i'd say go for it if the price of the flights is OK - Reus airport can be vastly more expensive than flying into Barcelona and getting the train down - so look at both - the train is SIMPLE and you're only on it just over an hour - only costs 14 euro or so.

if you choose to go there, i would stay up the other end of the beach AWAY from where the train station/old town is. there's more of a touristy atmosphere and plenty more on offer.

just saw your edit - 24th - week of halloween - you wont get much sun.
it goes wintry around the middle - so think along the lines of between the 10-20th october it'll change to much colder, windy and lots of rain comes in by end oct, start nov.

what about South of spain - Benalmadena/torremolinos is a good spot, loads for families, theme park, lovely beach and you'll still have weather.
flight time isnt much more than salou/reus - probably an extra 20mins or so.

and actually a lot cheaper in southern spain for food/drink than it is up in that region.

We were in Salou around the October bank holiday in 2018. We had one day of really nice weather then it was very overcast and had to wear hoodie/cardigan all of the time.

You wouldn't be using the pool (unless heated) but there is plenty to do in Salou with the Theme Park and we also took a day trip to Barcelona. The main bars were open but a lot seemed to have closed or were closing the following week.
