Any list around of what actually is open. Trying to book a spot for next weekend is proving impossible.

Just from previous posts and adding a few more off the top of my head:

Oliver plunkett, Fran well, Clancys, Dwyer, Tom Barrys, Goldbergs, Reardens, Woolshed, Gallaghers, Soho, Vicarstown/BDSM, Crawford and Co, Oyster Tavern, Fionnbarras, The Woodford, Paddy The Farmers.

Say with lot less pubs open than usual Christmas and pent up demand in general and especially with Christmas means bookings filling up fast alright.

There's a list of 12 here. Lot of them seem to take bookings as well so could be full potentially but could be worth a try https://www.corkbeo.ie/culture/food-drink/cork-city-pubs-open-walk-19420193
