Ive no idea, but nothing’s more authentic than homemade. Its basically just garlic mayo!

I am *still* afraid to eat raw eggs, so never attempted to make mayo.

Should I really just get over it and try?
I have some nice organic garlic.

Plenty of recipes for non egg home made mayo around

Stick blender method for conventional home made works very well

I haven’t done it in ages, but as far as I recall the acid in the lemon kills the raw egg baddies.... that’s my memory, so no doubt someone can correct me.

The main baddie is salmonella right? The likelihood of that in eggs these days is tiny. I think they vaccinate the chickens in Europe now?
