What do do with turkey or pork mince?

    It's cheap as chips.

    I was thinking something like shepherds pie? I've seen turkey mince versions of this. Would it work with pork?

    Anybody here done a turkey mince shepherds pie?

    I've seen turkey and pork "kabobs" and balls and burgers etc. I've tried turkey burgers before. Dry as sand.

    What do people here do with the above.

    Pork mince - 50/50 or 66/33 with beef (beef as the 66) in virtually anything Italian you might normally use beef for. Bolognese, meatballs, pasta bakes, whatever.

    I used to buy turkey mince quite often when I lived in Ireland, used to make meatloaf with it.

    You could try pork or turkey mince in a chilli.

    Pork mince is great stir fried with Asian Flavours.
    Garlic, chilli, ginger, black beans, soy sauce, fish sauce, rice wine, sesame oil, spring onion, coriander etc...

    Often make turkey burgers with turkey mince, usually add some chopped peppers, onions and an egg to bind the mixture and I've never had an issue with them being too dry.

    Pork Mince is nice blended with prawns, breadcrumbs, chilli and coriander in a food processor to make meatballs for use in Asian style soups.

    Not sure about turkey but imagine pork would work in a shepards pie style dish. Try throwing either into bbc goodfood or something similar that will give a list of recipes that use an ingredient.

    I made a big batch of Turkey Ragu recently. It's not cheap turkey mince but it is only 1% fat so quite good for you.

    Jamie Oliver's Green chilli is my go-to for pork mince. You'll read the recipe and go "That sounds very boring" but it's absolutely amazing.

    Pork Slab
    500 g lean pork mince (Lidl is very good).Sprinkle both sides with seasonings of choice (maybe prick with fork to help seasonings penetrate). Fry on both sides until cooked. Slice like a meat loaf.

    We made this, and it was good. I sort-of forgot about it when cooking the first side, so it cooked a lot. That was good.

    I haven't made these, but they look good:
    Turkey burgers
    500g turkey mince (I like Lidl's)
    1 red chilli
    2 cloves garlic
    About a 1" square piece of ginger
    A shallot or half a small onion
    About four stalks coriander
    About 6 or 8 mint leaves
    Pinch of Chinese 5 spice

    Bung everything bar the mince into a food processor and blitz to a rough paste. Mix into you mince, form into four patties and bob's yer uncle. I usually serve them in a pitta or half a wrap with yogurt and baby spinach leaves.

    The OH will probably tell me it's too dry, but I care not :P

    Sounds HORRIFIC but interesting. I can't imagine it easily cooking all the way through. Must take ages?

    It's dirty food :) but it was good, and I don't know why we haven't made it again. Maybe it's the thought of using a whole pack of mince in one go.

    I can't remember how long it took - 20/25 minutes? I think I used a meat thermometer. Don't forget the slab is only about the thickness of a couple of quarter-pound burgers, maybe less. Me leaving the first side longer than I was going to meant it got a nice crust.

    Greek pork burgers. Get some greek seasoning, oregano and lemon juice in with the pork. Make into burger shapes and fry. Mayonnaise and crumbled feta mixed together and put a few dollops on the bun. Accompany with greek salad or chips or whatever you fancy.
    Picked this up from a meal kit free trial a while ago and have made it multiple times since.

    I adore these noodles made with pork mince. It's a huge recipe, I usually half it, and I use rice noodles. You can get the sambal in most Asian supermarkets.

    This is very much what I was talking about when I said that pork mince is great stir fried with Asian flavours. That recipe i a very good example and a great starting point for experimenting with Asian flavours and ingredients.

    Where do you usually get them cheap?

    In asking that, right now the pork mince is a very good price in tesco, 3x800g packs of 15% mince for E10. There are 37 meat & fish products in that mix n match 3 for 10

    The regular price is 4.50, which is 5.63 per kilo, and while that is not overly expensive their pork chops are 5.73 per kilo, so I'd have hoped the mince would be a bit less. There is no tesco own brand turkey mince anymore but last I remember it was not that cheap, chicken fillets were less.

    The turkey mince they have now is 10euro per kilo.

    A while back I had some pork mince and some left over bread stuffing, mixed them together and made burgers with them. They were delicious and have been made several times since. The kids love them.

    Pork mince makes lovely meatballs for having with a tomato sauce.

    Another popular one in our house is to mix the pork mince with a crumbled up black pudding and shape it into burgers.

    I tried this last night - it was not a success :o The teenager went upstairs to change his socks during cooking as the smell was so bad he thought it was feet. The pork never caramelised for me - so it just tasted like sugary pork. :eek:

    Mrs Beer did a lovely thrown together stirfry the other day - having it for dinner again tonight.

    Pork mince, garlic, ginger, Koran pepper flakes, onion, aubergine, turnip, tempeh, white wine.
    Served with white Thai rice.
    extremely economical meal.

    Couple of things to make pork or turkey mince more succulent
    Old Chinese trick... For each 500g. Add 1/4 tspn of sodium bicarbonate(bread soda}) 2 tbsp cornflour and 100ml water. Allow to stand for an hour. Add whatever seasoning and ingredients you like and cook as burgers, meatballs etc.

    For meat loaf. Add 50% good quality sausage meat and proceed with usual recipe. Be careful not to over season as sausage meat can contain 2% salt and the norm for modern tastes is 1%

    Make home made burgers with either, or both meats. Add your own spice mix. Make up a batch and pop into the freezer. MUCH better than processed. Been doing it for years now.
