Because a lot of the final percentage vote is early votes and postal votes which have been favouring Biden all night

Much of the remaining votes to be counted are mail in or in urban areas which would break significantly for Biden. For example Trump's lead in Georgia 3 hours ago was nearly 300k, it's now 102k as votes from Atlanta are still being counted.
