Help - banana muffins

    Can anyone provide a tried and trusted banana muffin recipe?

    I've made two batches recently using two separate recipes that both ended up in the bin. Soggy bricks basically. I've bananas to use up and a two year old to feed.

    Banana bread is fine but I really want a fool proof muffin recipe so I can freeze them and defrost as needed.

    Help!

    I've used my regular banana bread recipe and just put it in a muffin tin the last few times - I use this recipe (original bake was for my sister so it had to be vegan and we all liked it so it's stuck) but leave out the sugar as it doesn't need it if the bananas are ripe enough - I add chocolate chips/chunks and walnuts, usually at least 50g of each and get about 12 muffins out of it using an ice-cream scoop to portion; they're smallish so you'll get less if you want bigger muffins

    I tend to put them in for 20 minutes and check them, sometimes they need a little more time

    I've never frozen them as they don't last long enough for that

    I ve used this recipe many times, never failed. I like adding some walnuts on mine. They freeze really well as well.

    Thank you! I made these. I kept to the recipe but added chocolate chips and chopped pecans.

    They're absolutely delicious. I'm delighted.

    You've probably fed the two year old by now :pac: but just to add another good recipe to your list. I always use this one and it never fails, just don't go too heavy on the bananas and I cut back on the cinnammon just a little. I add blueberries as I'm portioning out with the scoop so they don't sink. I make a batch and freeze them, put one in a container and it's defrosted by the time I get to work :D
