I wonder if there's anything I can do...just dropped £1799 on a "new" model...will the new M1 chip be the same price when it comes out?

You can return it under change of mind.

New Macbooks will be the same price or close to it.

However only 13" version with M1 chip are currently available, and apple only announce products at their events, so 16" M1 macbook pros will not be here for 6 months I reckon.
