The above instances are racist, yes. Calling a person of Chinese descent who was born in Ireland "not Irish" is also racist.

No, but 'Paddy' or 'Mick' is given the historical context of dehumanizing an immigrant population. 'Chinaman' was used in America in the 19th century to erase any individuality or humanity from the group, rather than using the person's name. You wouldn't call a Chinese man a 'Chinaman' because you know what kind of response you would get.
