How can I configure Dual Resilient uplinks from Ubuntu server onto two separate (Cisco) switches?

For resilience, I want to connect an Ubuntu server with ONE IP Address using two ethernet interfaces onto two separate switches. So I want one link to be primary link to the primary switch and the other a backup link to backup switch, to be used if the primary switch fails. So I suppose I want the interfaces to be Active / Passive

How can I achieve this please ? I don't think I really want a Bond, because the switches are not of the same stack. Could I in some way add a Vlan address and add both interfaces to the Vlan ?

Can't comment on Ubuntu but I did this on Centos using a bond interface with a policy of "Active Backup" i.e. one interface active & the other inactive unless the active one goes down.

I guess VRRP is the answer. How do you plan to use one IP on 2 interfaces, by bridging them? I guess you are looking for something like this:

That would be for one gateway from a pair of firewalls. That is not what I want. I want two links off the server, one active, one passive. Your diagram shows a server with one IP and one uplink, likely into one port on a switch connected to two FW's
