Couple of nice places up near Doyle's corner in Phibsboro.

Not sure if it survived the pandemic, but the Cobalt Cafe up the top of North Great George's St was an interesting spot.

Blas cafe on King Inns St.

Capel St is a 5 minute walk from Parnell Square and has a rake of places. Would recommend Brother Hubbard but you also have that Vietnames pho shop which is decent too (if you can get a seat). Also 147 Deli on Parnell St is a good shout.
