Hi, Does completion of a Sole Guardianship Affidavit (to apply for a passport) impact on the father's ability to later get joint guardianship (eg through a court)? Thanks.

Nope.
Joint guardianship can be applied for any time up to the child(ren)'s 18th birthday.
However, if an application for joint guardianship has already been made and is pending a hearing, then a declaration of sole guardianship cannot be used.
