Since when has light milk gone to 1% fat??

It used always be 1.5%. If the dairies are reducing the fat to 1%, that means they have 33% more butterfat which they can make money off, for cream, butter or other higher value products. I don't see the price of the milk dropping accordingly . . .

low fat milk has never been cheaper than full fat milk so I don't see lower fat low fat milk being cheaper anytime soon.

Low fat milk has less fat soluble vitamins but also less cow hormones.

why just not take 1 litre of 3,2% milk, save some money, dilute it with 1 litre of water and have cheaper 2 litres of 1,6% milk ? :)

Not milk; watery yukk! Reducing fat does not mean diluting the milk. just reducing the fat content by eg skimming ...
