excuse my ignorance but does the chainring fit ultegra 6800?

No, the Miche chainring is for a 5-arm spider and the 2 shimano rings are for MTB chainsets.

I've also got rs500 shimano 5 arm here.. will the chainring fit on that?

Check that the BCD is 110mm. I've also found the 34-T inner ring (also unused) if you're interested ?

just confirmed with calipers, it is 110 bcd
