I have a Stuart Turner water pump that's connected to my electric immersion tank. How can I monitor energy usage from each of these?

To monitor the energy use from the pump you could use a SONOFF POW R2 as it integrates well in HA.

I won't recommend using one for monitoring the immersion though as it is not rated for the load.
