Are there any MP3 solutions for the car that have a hard disk (as opposed to CD-R's full of MP3's)?

if all you want is an mp3 player in your car, you could just buy yourself an mp3 player and connect it up to your car stereo, if you havent got an aux in on your stereo, then you can buy an fm modulator which either:
    a) connects inline with your antenna
    or
    b) has a small transmitter which transmits wirelessly (no need to pull stereo out)

option a is obviously better because theres little or no chance for interference, b is easier to do if you cant get access to the back of your stereo

however if your anyway computer minded, you could build an incar pc. check out http://www.mp3car.com theres a tonne of other sites on the internet about them, basically its a small pc which can be mounted inside the car and using a touch screen you can not only play mp3's but dvd's, use gps navigation software (with a gps antenna ~€50) pick up wireless internet in your car everything a pc can do and more, this is a slightly more expensive route, but for ~€600-1000 you can build a pretty good system.

^^^ Connects inline with your antenna

Where can you get an adapter to do that ?

FM Modulator hard wired at the back of the head unit through the aerial connector.
