what kind of rock music covers would you like to see a small band play in their setlist at a gig to fit an hour?

None. Play your own material, and if you still feel the need to add in a cover song, make it something that's been a big influence on you, don't try to pander to the crowd, and don't end up being a crappy covers band.

Play whatever pleases yourself, if it's a good original or a good cover it won't make a difference to a pub full of people once you do it all well. But only play one cover at most. But if you make it obscure people will think it's an original.

It all depends on what style of music you are.
If you could play thrash metal then Slayer- Angel Of Death would be good.

Or you could always play a cover of Stand By Your Man

I saw a country band playing heavy metal songs in German. That was a great evening.
