easy to make vegetarian starter

    Anyone have any ideas for an easy to make (not too many unusual ingredients) vegetarian starter?

    x Can't be soup
    x Ideally should be able to prepare it ahead (say that morning for the evening)
    x Main course is a grattin so this should preferably not be oven based.

    Looked through a few cookbooks and haven't found anything.

    Any ideas?

    Steamed Asparagus with melted butter or Grilled Asparagus with balsamic and parmesan.
    Buffalo Mozzerella with tomatoes and pesto.
    Flat mushrooms stuffed with blue cheese and breadcrumbs.

    having just had wild asparagus, wrapped in bacon (ok - the non-vegetarian option!), grilled on the BBQ, drizzled in AAA Balsamic....

    Give this one a shot, it's always a hit in my house.

    2 bulbs garlic
    2 tbsps Lemon juice
    1 small onion
    Fresh parsley
    3 tbsps tahinii
    6 Tbsps Olive oil
    salt
    pepper

    Roast the two bulbs of garlic at 180c for 8-10 minutes, remove from oven and allow to cool. Once the garlic has cooled then pop it out of its skins and chop it finely. Chop the small onion finely then add it to a medium shallow pan with the olive oil and the chopped garlic and fry until the onion is sweated down and soft. Remove the garlic and onion from the heat then add lemon juice, tahinii and Chopped fresh parsley and season with salt and pepper. Serve with pittas or french bread.

    pear with blue cheese-
    mix the cheese with a little mayonnaise, fresh cream and maybe a squeeze of lemon.
    peel the pears, cut in half lengways, cut out the core and pile blue chese mix on top.
    sprinkle with toasted pine nuts and enjoy

    Variation on Catspring's recipe (for two)

    One firm, barely ripe pear, hazelnuts, rocket, balsamic vinegar, blue cheese, rocket.

    1. Peel, core and halve pear.
    2. Boil pear halves until soft in some water with a squeeze of lemon juice.
    3. Drain pears.
    4. Toast hazelnuts in a dry pan. Chop toasted hazelnuts.
    4. Meanwhile, put still-warm pears under grill with blue cheese in the cored out hollow, until cheese melts.
    6. Server warm pears with melted cheese, sprinkled with chopped hazelnuts, on a bed of rocket drizzled with balsamic vinegar.

    grilled red peppers with goats cheese and some balsamic vinegar?
    quick and simple
    you could roast the pepper in advance/in the ovan with the main course
