This one here is a pretty good vegan/vegetarian restaurant, if you are into hare krishna style food.

Radha Govindas, abbey Street.

There is also Govindas at 4 Aungier Street in Dublin 2, another Hare Krishna run place, all in all nice food and they are a nice bunch of unassuming people.

101 Talbot has a few decent veggie meals on their menu but it's far from being a veggie restaurant. I was there last week and there were two veggies out of 8 main courses in total, the rest were meat.

Any decent Indian restaurant should have a better selection of veggie options than that.

Is Escape still open in Bray? That used to be a fantastic place.
