White soda bread

    Have been baking this a lot lately.
    It's quick and easy, and absolutely gorgeous hot out of the oven with lots of butter and some smoked salmon.

    Ingredients:
    450g plain flour
    level teaspoon bicarbonate of soda
    heaped teaspoon caster sugar
    level teaspoon salt (maybe a little less, depending on taste)
    400ml butter milk
    some butter (for greasing loaf tin)

    Tactics:
    Pour all the dry ingredients into a large bowl and mix together (do not sieve the flour).
    Gradually add the butter milk and mix until you have dough.
    Grease up (with the butter) a 2lb loaf tin and throw the dough into it.
    Put into a hot oven (gas mark 8 or equivalent) and bake for 30 minutes.
    When done leave it on a wire rack (from your grill) to cool.

    You can make this into a fruit soda very easily by just upping the sugar content to 25g and throwing in about 25g of sultanas.

    there is nothing better then fresh bread...and proper home made soda bread is just pure class!

    My grandmother although senile makes a beautiful soda bread which I find is lovely with white pudding on top and a coffee to wash it down. Sparks you up in the morning.
