Finishing Farmhouse Table Top

Hi, bought a new house that will be finished soon and setting about amassing our furniture. It's a 'new build' house, was started in 2009, builder went bust, bought the site back and now finishing it. Weve gone for a country style kitchen, light green shaker style with off white counter tops. Oak effect floor tiling. We've just picked up a semi restored pine farmhouse table at a second hand shop. The chairs and table legs are white distressed finish that need a little touch up. The table top is unfinished pine and we're wondering how best to finish it. I hate when pine goes yellow/orange. Thinking of a darker stain finish on the top but not sure. After staining how best could we finish the top and protect it? We want to keep the character of the table, it's a lovely piece. Any advice or ideas appreciated please.

Any oil based finish will turn pine yellow/orange in color, if you want to keep it light in color a water based lacquer is your best hope, same if you want to stain it first, then a water based lacquer to finish

Thinking of going a little darker with the table top, medium or dark oak stain? Could you recommend any particular water based lacquer to seal the finish?

Any of the lacquers/varnishs for wooden floors should be the hardest wearing

Going to repaint the table legs, aprons and the chairs. The 'wishy washy' distressed look isn't for me I think. What steps should I take to repaint? Sand lightly, clean and paint? Or should I use primer before painting. Thinking of painting in an off white colour in eggshell finish. Is Fleetwood or dulux eggshell paint better?
