Can anyone recommend a sun holiday destination for a family of 6 (the 4 kids are ranging from 4 to 12 years old) flying from Shannon.

Salou. Ryanair fly from Shannon to Reus.

Some very family friendly resorts (Golden Avenida in particular), theme parks with a great selection of rides for young and old, near beaches, some decent restaurants around.

Would you consider one of the many many camp sites in Europe?

Great for kids of your ages, plenty to do all week.

Eurocamp holidays are great for larger families. For a start, you can have 3 bedrooms with separate beds. Maybe have a look at the best flights out of Shannon and then google campsires in those areas. There are some in north Spain which are great. There are a few different operators and prices vary so check a few.
