I thought this strange for a plane of this size.

B777-2U8(ER) is currently flying (22:50 16/06/23) at 36,000 ft over Ireland but there is no Start/Destination airports available.

Following back its flight path, I see it took off at Sofia airport. It's over the Atlantic now...tracking it at the moment.

Omni Air - as a rule their flights are blocked from full tracking on FR24.

As said above it's almost always gonna be Omni. Especially with the "2u8(ER)" designation. If you see any unmarked 762s/763s, they'll often be Omni too. Usually there's one in/one out daily through SNN.

Omni is generally chartered flights for transport of US military personnel, right?

Yes, through Shannon anyway. They often head down to Kuwait/Sofia after coming from the likes of Baltimore. The occasional Eastern Airways/Atlas Air aircraft drop by on similar ops.
