Anyone use Curry Sauce? As in, the type you'd get in a fast food joint?

For some reason I've been thinking about Curry Chips recently.

lol

They were good.

Remember those?

Saturday afternoon at the local frier.........

Reminiscence aside, is it possible to make quality curry sauce at home, the kind you could put on say, potato wedges?

I always felt this kind of cuisine was a little, trashy, frankly.

But I have a hankering for it recently.

Is it as good when made at home, or basically no substitute for the fast-food joint style of curry sauce?

I use Mayflower brand. It's similar enough to the chipper type.

Is that how all curry sauce is made?

It's like packet soup, just a different type of powder?

Mix it in a saucepan with water, that's it?

Yeah, it contains flour, so you're mixing that gradually with cold water, to make a sort of roux.

Then gently heat and add water for the desired consistency. Stir frequently.

There's a good number of servings per packet. Can't remember now. 6 maybe?

It's in powder form, so you can use as much or as little as you like, and it's ready in a few minutes.

Keep the powder in an airtight container in the cupboard.

If you do have some leftover, then it should keep in the fridge for a few days, but check the packaging instructions.

There are also Japanese roux based curries that come in a brick form. Similar story.

You could also look out for readymade Katsu curry, usually in sachets, which has a similar flavour profile.

Really don't understand the love for Mayflower, it's been like turnip soup anytime we've bought it. McDonnells is the go to, Chef curry powder also not bad. Sing Li we've been picking up in Supervalu and really like their paste (though stirring it so you can scoop some out is a pain) and their slimmers curry (powder) is good too.

Mcdonnells here too. I've a lad swears by it. Never tried it myself. Like my chips with salt. Plus vinegar if in the humour. Ketchup occasionally.

toasted sesame oil
five spice powder
Jimmy's satay sauce
light soy sauce
MSG

McDonnels is decent, I have a tub of it in the press for evenings when for whatever reason there isn't going to be a family meal - make some rice and oven chips, lash a chicken breast in the airfryer and grab some emergency frozen veg to heat up, lash it together and it's a quick enoughdinner.

I use this for Katsu curry. Its lovely. For chips I use the Chef curry sauce in a bottle ( the one Paul McGrath used to advertise) Its decent, and no need to make it up with water etc.

Thinking of making my own (maybe that was the intent behind the OP's question?), just for fun if nothing else...

This recipe looks easy enough, and fairly healthy too (commercial brands do seem to contain a lot of oil), although I might add MSG and maybe sugar?

I guess how it turns out would depend a lot on your choice of curry powder. I have some nice, pungent 5 spice already.

Really like the chip shop version.

Drowned some chunky oven chips (Aldi, best brand) in some nice consistency sauce.

Little fish on the side, little avocado on the other side.

I think it will add some nice diversity to my culinary routine moving forward.

Oh id love some curry chips now. Not going to the chippers anymore though. More expensive than going to a restaurant now so we cut out the chipper altogether. Whats the most chipper like curry sauce you can buy in a shop? Must test out a few.
