Hi all! We have been experiencing an issue on site where threads have been missing the latest postings. The platform host Vanilla are working on this issue. Generic form-moulded beef burgers from the local butcher, sauteed mushroom/onion/worcestershire sauce/paprika topping, tomatos, burger sauce and brioche buns

First outdoor cook of the season probably made this taste even better than it would have already.

Chicken wings with made up spice rub, with another batch after. Philadelphia, chive and yoghurt dip. Really should have used mayo as well to get the fat content up.

    Air fryer wings Dave?

Didn't take any pics but had some family around. Pork neck slices breaded, browned and cooked for about an hour in the oven. Carrots, green beans, mash, gravy and apple sauce with ginger and sage.

Tempted to report you for not taking pictures of that, sounds delicious.

It's really nice. My mother used to do breadcrumbed pork chops, in the oven. They're lovely. The meat becomes lovely and soft while not becoming dry like pork often can.

The pork neck slices worked well and were very economical.

Our main oven has stopped heating for the third time so we’re confined to the grill/top oven for Gesture dinner.
Lamp chips with Gratin Potatoes and Garlic Beans.

When I was buying the chops yesterday, the butcher had huge turkey legs so boned, stuffed and rolled one to make two roast dinners for the future. I’ve also reduced the stock for a soup or something tomorrow.

    Baked cheesecake with blueberry compote

Steak and Guinness pie. Outrageously buttery potatoes and slightly overdone tenderstem broccoli.

    Easter egg for dessert.

I was watching MasterChef Australia the other night when they have to make something crispy or with a crunch. My girlfriend asked me what I'd do and I had this idea. A chicken mille feuille essentially. It was my first attempt at it and I reckon there's things that can be improved but overall I loved the idea and it tasted great.

Mash at the bottom, then a sous vide chicken breast, sage and onion stuffing, crispy chicken skin, another breast, sage and onion stuffing, more crispy skin and then gravy on top. I thought it visually looked rather interesting. Classic flavours that worked well but as I said earlier, I reckon it could be improved.

I'd slice the chicken breast in two rather than serving two breasts. (assuming you are looking for feedback)

  • Registered Users Posts: 934 ✭✭✭Salvation Tambourine

Yeah, I was thinking two breasts was a bit much. They weren't full breasts though. I flattened them a bit before the sous vide and then trimmed them into a rectangle for aesthetics. Cheers for the feedback!

The bacon salad was delicious, but I think I over air fried the monkfish goujons.

Bit of a picky dinner here tonight. Meatballs, pita chips, baba ganoush and sweet potato fritters.

  • Moderators, Recreation & Hobbies Moderators Posts: 11,718 Mod ✭✭✭✭igCorcaigh

Sweet potato fritters? 😃☝️Looks lovely @Mystery Egg (recipe for the fritters?)

  • Moderators, Recreation & Hobbies Moderators Posts: 2,618 Mod ✭✭✭✭Mystery Egg

I had lots of leftover steamed sweet potato after batch cooking for the baby, so I mashed it, added some flour, egg, salt, pepper and a pinch of sugar, combined and fried spoonfuls in olive oil.

I mixed it together in the food processor but next time I wouldn't do that, I'd just mash it for a better texture. It was like pancake batter and I was looking for something more textured.

The taste was delicious and some garlic would have been great in them too I think. A creamy dip would have been a nice accompaniment, perhaps a good garlic sauce.

The baby milled about half a dozen of them, too.

Amongst other things... More fritters. Going fritter mad so we are. These are broccoli, cheddar, eggs, flour, breadcrumbs and black pepper. Really good and lots for the freezer.

One very beautiful/ chilled baby getting stuck into his hash mixy uppy 🥰🤪

  • Moderators, Recreation & Hobbies Moderators Posts: 11,718 Mod ✭✭✭✭igCorcaigh

I've never tried making fritters, thinking they would be too oily, but I might give them a go in the air fryer?

  • Moderators, Recreation & Hobbies Moderators Posts: 2,618 Mod ✭✭✭✭Mystery Egg

I don't find them oily at all! Use a neutral flavoured oil and ensure it is hot before adding them, so that the fritters are crisp, and then drain them on paper towel.

You can use the air fryer for sure but they will be much drier and will have a different texture. Worth a try though!

Oh, and fritto miso is a new thing for me to learn today:

  • Registered Users Posts: 935 ✭✭✭Recliner

Yes, in a restaurant. My cooking skills wouldn't stretch to that unfortunately.

Roast chicken dinner last night with gravy, carrot and parsnip mash, peas and roast potatoes. Not exciting but always a favourite.

They outsell thighs in Aldi 4 to 1 but a skinned and boned thigh is a juicy piece of goodness.

Yes, I look forward to the free range s&b chicken thighs for a curry soon 👍

A truly thought provoking dish, like a piece of art that requires immense study to extract its true meaning.

On one side of the plate we have a salad, while on the other we have baked beans. A combination that I suspect most of us would be unfamiliar with. What led to this? What came first, the salad or the beans?

Beans with toast? Sure thing. Beans with a fry? Controversial, but I'm on the right side of that fight and support it all the way. Beans with chips? Big fan.

Beans with a salad? I'm not really sure what to say. Help me out here!

bean salads have been on the go for years.. 3 bean mix.. etc v used commonly to bulk up vegan salads..

the only diff above it that they are in a sauce - so no need for salad dressing

    a well balanced meal

  • Moderators, Recreation & Hobbies Moderators Posts: 11,718 Mod ✭✭✭✭igCorcaigh

Well, I did use the roast carrots as a barrier; no salad was harmed by the bean juice, rest assured!

Well, yes, but there are beans and then there are beans. The fancy ones are one thing, but I am specifically referring to the real beans that come in a tin covered in tomato sauce.

    Tell me this….Heinz or Bachelors?

  • Registered Users, Registered Users 2 Posts: 7,175 ✭✭✭con747

Aldi beans are nicer than both of those. Proven in taste tests as well.

Don't expect anything from life, just be grateful to be alive.

They probably but all the salt and sugar back in that the mainstream producers had been reducing!

Aldi sugar free beans are my favorite

  • Registered Users, Registered Users 2 Posts: 6,957 ✭✭✭sporina

tinned beans are just haricot beans in a tomato sauce - commonly found in a mixed bean salad - tomato sauce acts like a dressing.. your prob just used to them with a fry etc..

  • Moderators, Recreation & Hobbies Moderators Posts: 2,618 Mod ✭✭✭✭Mystery Egg

I love baked beans in tomato sauce. On buttery toast... unbeatable.

Tonight's dinner was mince tacos with all the trimmings. Absolutely delicious.

  • Moderators, Recreation & Hobbies Moderators Posts: 11,718 Mod ✭✭✭✭igCorcaigh

Let it be known to everyone, that I did not, like some heathen, use the bean juice as a salad dressing, I had merely run out of bowls. I must invest in a ramekin. 😂
