A bit self explanatory tbh but whats your piece de resistance? What would you make if you had but 1 meal to show off with.

For me its 2 rather simple foods, Ya could barely call them dishes that I have off to a fine art. I've just had one: Poached eggs with bacon on toast. Little drop of vinegar in the water just as its boiling, give it a stir, drop the eggs in and leave on the heat for about a minute. Turn off the heat and let them finish in the heat of the water for 2.5mins or so. They should be just at that lovely point between completely runny and starting to set. Delicious.

And ya cant bate a nice steak. For me it's a nice bit of Angus Sirloin. Rub it with olive oil on both sides and season with a bit of salt and pepper. Into a nice hot pan. 3 mins each side. Take it off. Wrap in tinfoil and fry up a few shallots and chestnut mushrooms. Simple and delicious.

Best lasagne I have ever had was made from the recipe on the back of the Roma lasagne sheet pack. Whenever I have made it for friends they have raved about, it so it has become a personal favourite. Made from scratch too, well, not the pasta.

Made a very simple dish of chicken thighs, garlic, lemon, red onion and rosemary the other day. Just bunged it all in the oven and it came out delicious. Will be making that again. :D

Only recently started cooking myself. Someone was kind enough to give me a lil push in the right direction and encouragement/pointers. Surprising easy in the end, always assumed cooking was something I wouldn't be capable of.
Anyway! I personally think I make a mean pasta carbonara dish. A lil dash of wine into it too for good measure (why not!)
Making me hungry now even thinking of it....

I wanted banoffee the other night but had no condensed milk so what I used instead was butterscotch angel delight. It was lovely and made it much lighter and I'd contemplate not going back to the toffee at all now.

Favourites that friends ask for again and again...

Pepper Brandy (or sometimes good quality whiskey) and cream sauce.
Served with steak, this is an artery closer and can be a fire hazzard (there are scorch marks around the cooker area from all that high flame reducing) but it is soooo good! (serve with good red wine)

    Satay Sauce
The obscene amount of chillies in this are hot, but I need to keep my cool as there are so many ingredients to remember! Served either as a sauce based dish or else as chicken satay skewers. (best served with beer)

    Traditional English Roast
Good quality beef, goosefat roast potatoes and all the vegetables, my Sunday roast is a firm favourite with friends as I have been blessed with luck when it comes to Yorkshire Pudding making. (serve with heavy claret)

My favourite of favourites... can never get anyone to do it as I am the only one I know who makes hollandaise...

Smoking hot pan with a nice thick fillet steak well seasoned on both sides. 2 minutes on either side and leave it rest. Shot of brandy into the pan - stand back - some crushed peppercorns, a glug of cream.... perfect.

  • Registered Users, Registered Users 2 Posts: 5,358 ✭✭✭borderlinemeath

Seafood pasta in a creamy white wine sauce.

And I do a great roast chicken and stuffing dinner. Or honey and mustard glazed ham.

And I'm really good at soups, french onion, potato & leek, cauliflower & brocolli.

And apple tart, with apples from the garden and pastry made from scratch.

I'm a good cook but I hate the cleaning up afterwards.

I make a good halloumi, sweet potato and rocket salad - I make the dressing too (big achievement for an average cook like me).

I also make a really cool chocolate log cabin that never fails to impress. It takes about 12 hours to make and contains about 10,000 calories but it'd last you most of Christmas

Crepes (I know they're easy but I do it the old fashioned way so it makes it special, can also do them while drunk which makes me very welcome at house parties) or stir-fry (I like chopping stuff up really thin and uniform). Pretty boring now I think of it.

I make the best Shepherd's Pie, no contest. And a cracking stew, though it's hard to go wrong there in fairness.

Spag Bol or Chicken and Chorizo Jambalaya, both from scratch.

Steak in a toasted garlic ciabatta with mozzarella, peppers and red onion.

I make a damn good kidney bean risotto and vegetarian ramen.

Oh yeah, and the secret to nice tofu (which I usually hate) is to freeze it and then thaw it out and marinade it before cooking. Much meatier texture, and actually liked by all my meat eating friends!!

Any tips for making it less dry? The fresh pasta always seems to go all pasty when I cook it in the oven.

    I make a mean persian-style three-level rice myself.

I can cook a bit - fairly handy in the woman's domain but my 'speciality' is roast potatoes. However, since coming to Canada I can't get quality spuds like those in Ireland. We're actually spoiled when it comes to produce in Ireland, really, really are.
Anyway, here's what I do for my special roast potatoes. It looks like a lot but when you consider that roast potatoes are usually cooked as part of a fairly large meal, it's not all that bad as you'll likely be engaged in doing something else in-between steps.

    1. Peel some medium sized potatoes (slightly bigger than a golf ball when peeled) and boil for about 20 - 25 minutes, or until the potatoes become quite soft. Don't worry if the potato begins to flake a little around the edge; this will actually help with the crispiness of the roast potato later.

    2. Gently lift the potatoes from the water with a slotted spoon and place into a bowl of cold water. Let sit in the fridge for an hour.

    3. Pre-heat the oven to 200 degrees celsius.

    4. Put a generous amount of lard, or if you've got a couple of euro to spare, duck fat into a deep baking tray.

    5. Place tray into oven.

    6. When fat is hot remove potatoes from cold water, gently pat dry and place in tray.

    7. Toss some sea salt and freshly ground black pepper over spuds.

    8. Leave in oven for approximately one hour, turning occassionaly.

    9. Take from oven. Consume. Build temples in my honour.

Mine has to be sesame crusted chicken with two sauces (tahini sauce and tomato and pepper sauce) I also make a vegetarian lasagne that is nicer than my beef lasagne.

Dessert - melt in the middle chocolate souffles

My 13 yr old son makes fabulous cakes and biscuits - his orange chocolate chip cookies are amazing!

I be lucky to cook something without burning it! Simple but nice food to cook. Something done quickly a bit too impatient to make too much of an effort.
I can make great coffee/tea! Toast, Pasta and frozen pizza seem to be the food I cook the best!

My Mother makes the worlds best roast potatoes actually, she uses Goose fat. I think you can buy jars of it in Tesco, makes them unbelievably crispy and golden.

My speciality is an Omelette. I actually make the worlds best Omelette (never flip, grill)
If you get to the stage where I am making you an Omelette you really are winning, for a variety of reasons.

I have also impressed with my Tuna steak with a light coating of Wasabi and sesame seeds. Delish.

My best dish would be: Carbonara cause its quick and easy.. (ooh er, etc. :) )
Oh and my rigatoni with red pepper and goats cheese sauce with cherry tomatoes and wilted spinach ain't half bad either, the sauce can take a long time to prep though..
A nice medium fillet steak with a baked potato and home made sour cream and chive isn't a bad option either. Simple but Nyommy.
